Feeding a clan?

It’s been a long working week.  Your’e tired and would love to just pop the feet up and relax!  Unfortunately, you have already agreed to cook for visiting friends on the Friday after work.   Your mind juggles through recipes that are made to impress.  Most of the dishes you’re thinking of are long and tedious and have too many ingredients.  After having to work you think there is no way I’m going to pull this off! Not to mention the cost of everything.

Just this past Easter weekend we had friends over.   After much contemplation myself I came up with a easy but delicious meal I knew would be a crowd pleaser.  And it was! Furthermore, it didn’t break the bank!

I made honey, soy, garlic and chili chicken wings with salad and toasted bread with melted blue cheese!  It’s easy cooking and full of flavour!

First you need to marinate the chicken in soy, honey, powdered or chopped chili, BBQ sauce, olive oil and pepper.  Then whip up your salad with a bit of olive oil, lemon, dash of balsamic, salt and pepper.  You can BBQ the chicken or if the weather isn’t great, sear the chicken for about 3 minutes each side and until golden and pop in the oven for another 6-8 min depending on the size of the wings.  Next, grill the bread until golden brown, remove from oven and add blue cheese.  Place the blue cheese bread under the grill for another minute. 

The other version I make has the same chicken but with a blue cheese, candied walnut and pear salad with garlic bread.  This is also very delicious.  To learn to make the salad please follow this link to one of my other recipes.

To make the garlic butter place enough butter in a bowl to spread over the amount of bread you have.  Next, add finely chopped garlic, parsley, salt and pepper.  Spread on the bread and grill when your meal is nearly finished.  

Plate up your dish or spread it out for people to help themselves! 

You can’t beat the taste with these simple dishes and your friends will thank you for not going overboard meaning more time to catch up and enjoy their company.
